Hangover Recipe #2: The Everything Omelet on Toast

So you did it again didn’t you? We’re back to that throbbing headache and Sahara dry mouth - worst feeling ever. It’s OK, time to drag yourself out of that bed, down to your local 7-11 and whip yourself up a decent homemade meal to fill up that hungry stomach. Here’s our second easy hangover recipe - definitely worth a try.

Ingredients

There’s not much you need, but in case you don’t have them all lying around at home, here’s everything you’ll need that you can find in 7-11.

Putting It All Together

Step 1

Chop up your sausages into small cubes about 1cm wide (or to your liking). Heat up your non-stick pan to medium high and throw in your sausages (without any oil because sausages already have a high-fat content). Pan fry your sausages until brown and crispy (or until cooked if you like your sausages soft). Remove sausages and set aside in a bowl.

Step 2

Chop your cherry tomatoes into small cubes (about 1cm), rip up your cheese into small strips. Add the tomatoes, cheese, and corn into your sausages bowl so they can party while you prep the next step.

Step 3

Crack 3 eggs into a bowl, season well with salt and pepper and whisk together until smooth.

Step 4

Place your same pan on medium-low heat (tip: leave the leftover sausages fat on your pan) - let it heat up for 1 minute. Then pour your egg mixture and let it slowly cook up from the bottom of the pan. When 80% of the egg is cooked, sprinkle the sausages, tomato, cheese, and corn evenly on the egg. When the cheese starts to melt, fold the egg in half, and let it cook for 30 seconds. Then flip it onto the other half and let it cook for another 30 seconds.

You’re done!

Place your omelet on a plate with some leftover cherry tomatoes as a side if you like. Chop the tomatoes in half and season them with some salt n pepper. If you want to spice up the dish a bit, drizzle some chili sauce on top to give it a little extra kick. Pop some bread in the toaster and serve on the side.
