Hangover Recipe #1: Spicy Tomato Baked Eggs
“I’m never drinking again”, said everyone who took that one too many shots the night before. But hey, no regrets right? Because you just had the most memorable night, you probably don’t remember much about. No worries, here’s the beginning of a series of simple hungover recipes you can make from your fridge scraps.
Hangover Recipe: Spicy Tomato Baked Eggs

Granted, you may not always have the right ingredients ready at home. But fear not, our hangover-proof shopping list below will make sure your trip to 7-11 is a breeze!
Putting It All Together
Step 1:
Drizzle a bit of olive oil in your pan (preferably one with a lid, if you don’t have one use a big enough plate to cover instead). When hot, put in your finely chopped chilies, garlic and parsley (leave some parsley to throw on top later) and stir for 2-3 minutes.
Step 2:
Add your chopped tomatoes and dried herbs. Stir for 5-10 minutes or until the sauce is thick. Stir occasionally to prevent the bottom of the pan from burning. Season with salt and pepper to taste.
Step 3:
When the sauce is thick, lower the heat and sprinkle over your sliced sausages. Make 4 holes in your sauce with the back of a spoon. Crack the eggs in the holes and cover the pan with the lid (or a plate that is bigger than the pan if you don’t have one) for 5-10 minutes or when the eggs are cooked to your preference. When done, sprinkle the rest of your parsley on top and some more cracked black pepper.
If you have some crusty bread lying around at home, pop some in the oven for a couple of minutes to serve with your baked eggs - there’ll definitely be a lot of dipping involved.
For best results, top it all off with some coffee or a glass of cold orange juice to freshen you up.
